Tomato Mozzarella Salad

Tomato Mozzarella Salad

1 package cherry tomatoes
5 oz. mozzarella cheese, cut into cubes

Dressing:

2 Tbsp. olive oil
1 tsp. Italian seasoning
Salt and pepper to taste (I used about ¼ tsp salt and a dash of pepper)

What to do:

  1. Cut tomatoes into halves or quarters, depending on size.  Combine tomatoes and mozzarella.
  2. Combine olive oil and seasonings.  Toss tomatoes and mozzarella with olive oil dressing.

And, it’s that easy!  Serve with sliced Italian bread, garlic bread, etc.  I recommend that you stick it in the fridge for a few hours, or over night to let the flavors really soak in, but it’s good right away if you don’t have time for that.
