We will be (kind of) on vacation this week, visiting my husband’s 6 hours away. So, my meal plan is going to look a little different this week. Since I’m still trying to eat healthy, I wanted to have a basic plan and also we don’t want to make them do everything for us while we are there. For this reason, we’ll be packing some simple meals with us.
This is kind of cheating, since we’ll be at my in-laws with access to condiments and extras (fridge, butter, etc.). But, I still think this list can get you started if you’re going away on vacation and don’t want to eat out for every meal, which gets very expensive.
We will be gone for 8 days.
I like to pack some snacks for the long drive. I might make my boys something like this travel snack kit that I found on pinterest. There are also some good snack ideas, here.
-Apples and oranges
-Peanut butter crackers
-Fruit snacks (a treat for my boys since we rarely buy them)
-Homemade trail mix
Breakfasts (a couple will be repeated):
-Whole wheat muffins w/ peanut butter and raisins
-Bagels w/ cream cheese and eggs
-fruit and yogurt with homemade granola
–Homemade blueberry muffins
-Donuts (there is a donut place there that Chad loves)
Lunches (some will be repeated):
You can find some great on-the-go lunch ideas here (Note: I do not recommend purchasing their lunch boxes. You can get rubbermaid/ziploc containers with compartments like that for a much better price in most stores)
-Tuna Fish with salad and crackers
-Lunchmeat sandwiches w/ chips
-Roll ups with cheese and fruit
-Spaghetti w/ salad and garlic bread
-Taco Salad with tortilla chips
I’m only planning/packing breakfast plus one other meal a day, because I suspect the other meal will be eaten with my in-laws.
