Rice and Veggie Salad
What you need:
2 cups cooked brown rice
2 cups cooked California Style Veggies (broccoli/cauliflower/carrots),
1 cup shredded or diced grilled chicken (omit for veggie dish)
1 medium tomato, diced
1/2 tsp salt
1/2 tsp Mrs. Dash garlic herb seasoning
1/4 tsp pepper
What to do:
Combine all ingredients, sprinkle with seasonings and eat! The juicy tomato adds plenty moisture for me, but if you need more add a couple tablespoons of olive oil or butter. I love this when I’m craving a light summer meal.
