Chocolate Peanut Butter Chip Cookies
Seriouesly, these are the best cookies ever. I’ve made and eaten many cookies over the years and these are my favorite, so I wanted to share the recipe. Forgive the not-so-great photo.
What you need:
1 ½ cup all-purpose flour
½ cup cocoa powder
½ tsp. baking soda
¼ tsp. salt
½ cup butter
¾ cup brown sugar
½ cup sugar
1 tsp vanilla extract
12 oz. package Peanut Butter Baking chips
What to do:
1. Preheat oven to 350.
2. Combine flour, cocoa powder, baking soda, and salt. Set aside.
3. In a large mixing bowl, beat butter, brown sugar, sugar, and vanilla. Add eggs and beat well. Gradually stir in flour mixture until well blended. Fold in peanut butter chips.
4. Drop by rounded spoonful onto lightly greased cookie sheet and bake for 7 to 9 minutes. Do not overbake.
This recipe is very freezer friendly. Complete recipe steps through step 3. Then, drop by rounded spoonful onto a cookie sheet, like this:
Put the balls of dough in the freezer like this for about an hour or so, until they start to get firm. Then, you can put them into a freezer bag, like this:
When you’re ready to bake them, simply thaw on the counter for 10-15 minutes. I have found that they don’t spread out as well after they’ve been frozen, so I kinda squish the balls down a little with my palm (or a spoon…whatever). Then, bake at 350 for 8-10 minutes. I usually check them after about 8 minutes, and leave them longer if necessary, because you don’t want to over cook them.
