Ingredients:
4 boneless, skinless chicken breasts;
1 can diced tomatoes;
1/4 cup salsa;
1 can black beans;
1/4 tsp garlic salt;
1/2-1 cup cheese, shredded
3 cups prepared rice (or angel hair pasta)
Preheat oven to 375 degrees. Place chicken breasts out flat in a small casserole dish. In a bowl, combine tomatoes, salsa, black beans, and garlic salt. Pour this mixture over chicken breasts. Bake for 20 minutes, or until chicken is thoroughly cooked. (This is a good time to prepare your rice or pasta). Sprinkle the cheese on top, and bake for 2-3 more minutes to melt cheese a bit. Serve over rice or angel hair pasta.

Yeah, we had it both ways, with the rice and the pasta. My hubby thought it was better with the pasta. I think it would be a perfect thing to cook in the crock pot.
