Hot Fudge Pudding Cake

Batter:
¾ cup sugar
1 cup flour
¼ cup cocoa
2 tsp Baking powder
¼ tsp salt
½ cup milk
1/3 cup butter, melted
1½ tsp vanilla

1. Preheat oven to 350 degrees.
2. Combine Dry ingredients (sugar, flour, cocoa, baking powder, salt). Mix together, then add the milk, butter, and vanilla.
3. Spread batter in a square pan (mine was about 9×9)
4. Add topping (instructions below)

Topping:
¾ cup white sugar
½ cup brown sugar
¼ cup cocoa
1 ¼ cup hot water

1. Mix together sugars and cocoa.  Sprinkle this over top of your batter, in your pan. DO NOT STIR, just sprinkle on top.
2. Slowly pour water over top of everything. Again, DO NOT STIR.
3. Bake at 350 degrees for 35-40 minutes. Do not overbake. The mixture will create a cake/brownie on top, and a layer of ooey-gooey pudding on the bottom :)

This is best served warm (and with a scoop of ice cream!)

THIS is my family's go-to recipe for those days when you MUST have chocolate, and you're out of EGGS! LOL LOVE it!

I have a recipe very similar to this, but it is cooked on the stovetop and takes 15-20 minutes, if I remember right. Always a great dessert for when guests show up and I haven't got a dessert already made.

Yes, definitely best with ice cream! I have heard of people making this in a crock pot, definitely want to try that sometime.
